I have two questions:

1.I have seen in many videos of your dock that show other clock faces than the standard ones. I however cannot find where to download them and how to install them once I have.

2.I have seen others mention Grid Stacks similar to those on MacOSX. Are there anything like those, or alternatives to the current Grid Stack layouts?

Any help would be greatly appreciated.

1) Clock images come with Winstep themes - see the links on the website for downloading additional themes.

2) Winstep Grid Stacks are not very similar to those of macOS. Apparently they are somewhat similar to those of the (defunct) Rocket Dock. And no, there isn't any chance of making them like those crappy macOS ones - at least, I should strongly hope so.
