Try pressing the SHIFT key before left clicking and then releasing the SHIFT key after the click. This should launch a new session and by-pass the 'Do not launch multiple sessions of the same application' setting.

If you want to launch a different type of Chrome session, try using individual shortcuts with specific Chrome command line switches. Remember the switches themselves (e.g. –incognito) should go into the Arguments field of the Item Properties dialog for that shortcut, and NOT be added to the Filename field.

Could it ever be possible to add custom parameters as options in the dock item context menu? Would save space and essentially give the same functionality.

I cannot help but seriously question how wise it would be for any kind of software to support a browser that is as unsecure, unsafe, and non-privacy respecting as Google Chrome and for that matter any Chromium-based browsers with any kind of special provisions. Nobody with even the slightest concern for online security and privacy, and indeed for privacy, freedom, and democracy should really be using any of these in the first place and ought to be discouraged from doing so.

Just my 2p's worth.
