I come to install the software Nexus dock, but I don't know how to make to change the icons which are on the dock.

Depends on the item type you want to change:

The Nexus control icon and module/widget icons are theme dependable, which means they cannot be changed directly. You can, however, change the style of the Nexus control icon (right click the control icon -> appearance and sounds -> Control Icon Color) or disable it completely.

All other items, just drop the icon (.ico,.png or .tif) image of your choice directly into the item, or right-click the item -> Properties -> Change Icon.
