Double clicking opens up another instance of Outlook when it is already running.

Can you change this behaviour so that any existing instance that is running is maximized?

You can change the behavior so that any existing instance is brought to the foreground: right click on the Email Checker Module -> Email Checker Settings -> Enable 'Do not launch multiple sessions'.
