Is it possible (with the latest version of the ultimate version) to create an element in the dock to eject an USB device?

Try adding an item type Program to the dock with the following in the Filename field

rundll32.exe

and in the Arguments field add the following

shell32.dll,Control_RunDLL hotplug.dll
