I bought Nexus Xtreme but want to install Nexus Ultimate instead. How do I do this? I have the key for xtreme but don't see anywhere to add in the nexus free version to upgrade it to the ultimate.

Your Winstep Xtreme license key will not work with Nexus Ultimate.

Anyway, it really does not matter, because Winstep Xtreme is modular, so you can use what you like and turn off the rest.

Since you don't like NextSTART (according to the email you also sent to Winstep support) all you need to go is prevent NextSTART from running at start up.

Open NextSTART Preferences (press CTRL+F12), go to the General tab, disable the 'Run NextSTART at Windows Startup' setting and press OK to save this option. Now simply exit NextSTART and it won't bother you again.

This approach allows you to keep on using desktop modules which are NOT a feature of Nexus Ultimate.
